Green Beans with Tomatoes

Servings: 4

INGREDIENTS:

2 pounds fresh green beans (preferably, Italian flat beans or Chinese string beans)
4 large tomatoes, diced ,br> 1 whole head of garlic, peeled
1 large yellow onion
2 Tb extra virgin olive oil
crushed red pepper flakes to taste
sea salt to taste

1 recipe, Rice Pilaf
fresh pita

DIRECTIONS:

Wash the string beans and snap into large bite size pieces. In a large sauce pan, add oil, onions and whole garlic cloves. Sauté until onions and garlic are lightly browned. Add greens beans and a sprinkle of salt. Cover and cook under medium heat, stirring occasionally. When the green beans are wilted and browned (about 20 minutes), add the tomatoes. Cook, uncovered, for an additional 15 minutes or so, until tomatoes have broken down and most of the liquid is gone. Season for salt and pepper. Enjoy warm or cold, with rice pilaf or fresh, hot pita.
