Peas, Savory Baby

1 lb. baby peas frozen or fresh
1 medium sized onion, chopped
1 can tomato paste (6 oz.)
1 cup water or red wine
2 Tb. extra-virgin olive oil
¾ tsp. salt to taste
Sauté chopped onion in olive oil until translucent and just beginning to brown. Then add peas all once and sauté for 5 minutes. Add tomato paste and fry for two minutes. Add water or wine, cover partially and simmer for 20 minutes. Add salt at the end.
Optional: Add your favorite variety of mushroom and sauté for 10 minutes or until browned before adding the peas.
