Fresh Fava Beans

INGREDIENTS:

2 pounds fresh tender fava beans,
2 jalapenos, deseeded and deveined, julienned
8 cloves fresh garlic, coarsely crushed
2 Tb extra virgin olive oil
sea salt to taste

DIRECTIONS:

This dish can only be made if the fava beans are very fresh and tender because you will be using the entire bean. Therefore this dish is usually only good in season, but it’s very tasty. Fresh fava beans are also an acquired taste. Try them out and see for yourself. Wash the fava beans and snap each into large bite size pieces. In a large sauce pan, add oil, jalapenos and garlic. Sauté until garlic is lightly browned. Add the fava beans and salt. Cover and cook under medium heat, stirring occasionally. The beans are done when they wilted, lightly browned and little or no liquid remains (20-30 minutes). Season for salt and pepper. Enjoy warm or cold, with fresh hot pita.
