Pudding, Grandma's Rice

4 – 1 cup servings

INGREDIENTS:

4 cups soy milk
½ cup medium or long grain rice
½ cup natural cane or white sugar
pinch sea salt
1-2 Tb orange blossom water
ground cinnamon

DIRECTIONS:

In a sauce pan, combine all ingredients, except orange blossom water and cinnamon. Heat mixture to a boil, stirring constantly. Reduce to a simmer and cook until rice is very tender and all the milk is absorbed. Stir in orange blossom water, using more or less, according to your liking. Spoon pudding into serving dishes. Allow to set for at least one hour. Sprinkle cinnamon on top of individual servings.
