Potatoes, Mamma’s Mashed

INGREDIENTS:

4 large Idaho baking potatoes (or any variety you like)
2 Tb. extra virgin olive oil
2 Tb. fresh lemon juice
pinch of dried mint
pinch of cinnamon
pinch of cayenne pepper
sea salt to taste
crushed black pepper

DIRECTIONS:

This is a dish my mamma would always make for my little sister when she refused to eat anything else. It is still one of my sister’s favorites and has become one of mine.

1. Preheat oven to 450˚F.

2. Wash the potatoes and bake in the oven until fork tender. Do not peel the potatoes. The skin contains the majority of nutrients and flavor. With a fork or potato masher, coarsely mash the potatoes. Add all the ingredients and combine. Adjust salt and black pepper for flavor.
