Seasoned Rice Wine Vinegar (Sushi Vinegar)

by Pierre S. Aoukar, MD
Posted: February 27

INGREDIENTS:

2 parts rice wine vinegar
1 part sugar
1/4 part salt

DIRECTIONS:

Recipes for dressings work better in proportions so that you can make as much as you want. For example, if you wanted to make ½ cup of seasoned rice wine vinegar (which is what the sushi recipe calls for), you would use: 8 Tb vinegar, 4 Tb sugar, and ¼ Tb salt. You will need to heat the mixture slightly to dissolve all of the sugar.
