DIRECTIONS:
This sauce is meant as a dipping sauce for dumplings, spring rolls or scallion pancakes. It also makes a great marinade. It is pretty much equivalent to a teriyaki sauce. I wrote this recipe in proportions so that you can make as much as you want. For example, if you wanted to make about 2/3 cup of this sauce, you would use: 6 Tb vinegar, 4 Tb soy sauce, 2 Tb sugar, 1 Tb. garlic, ½ Tb ginger and ½ Tb sesame oil.
1. In hot sauce pan, sauté garlic, ginger and chilies in sesame oil. Use chilies according to your taste.
2. Add the remainder of the ingredients and cook just until the sugar is dissolved. Garnish with chopped scallions.
3. To use as a marinade, chop the garlic instead of slicing it.
