2 parts tahini
2 parts fresh lemon juice
3 parts water
1/24 part sea salt
fresh crushed garlic, pinch

Measurements: 3 teaspoons = 1 Tablespoon

DIRECTIONS:

Recipes for dressings work better in proportions so that you can make as much as you want. For example, if you wanted to make about ˝ cup of tahini sauce you would use: 4 Tb tahini, 4 Tb lemon juice, 6 Tb water and ˝ tsp salt. Garlic makes a difference in this recipe, so it really is not optional. Tahini sauce or “taratoor” as it is known in Arabic is the traditional dressing for falafel. You can also use this dressing for any salad as well. Combine all ingredients in a blender or mini food processor. Blend until you have a homogenous mixture. You can use a hand whisk; however, this does not do as well of a job emulsifying the ingredients. Dressing will keep indefinitely if refrigerated.
