Summary:
The classic ingredient of Russian Borscht (beet soup), in the American diet, beets are perhaps one of the least utilized of all vegetables. Beets come in varying sizes and the green leafy tops can be used (as salad greens or steamed greens) as well as the bottoms. They are high in vitamin A, vitamin C, folate and fiber, both soluble and insoluble, while providing only 30 calories per cup—a sure way to help protect your coronaries. Though the flavor is unique, above all, their color is unparalleled in nature. They are an excellent way to add vibrance and nutrients to your culinary presentations. They’re also pretty good in a sandwich!
